"What are the benefits of using a tripod and shooting multi-camera?"
The main difference between shooting single and multi-camera is that multi-camera uses two or more cameras. This means that it is possible to shoot a variety of angles simultaneously.
With single camera production, it is only possible to shoot one angle at a time. Shooting with multiple cameras means that by shooting multiple angles it is possible to save time. Also, shooting like this can help reduce continuity errors as it is possible to shoot a whole scene in one take.
Shooting multi-camera can also save time in post-production as it is possible for the editor to easily find a certain shot or angle if they know what camera it was filmed on. Also, most editing software have an ability to sync all of the cameras used together, viewing them all at the same time and then editing by simply selecting each camera. This can obviously save lots of time.
